Removing incorrect values

If my weather station has reported incorrect values, how do I remove these? I know you can check the all time and month records but I want to grab the next best value, not manually put it in.

It's not clear which values you want to remove/correct. If you remove/amend the incorrect values from dayfile.txt, then the all-time record editors will allow you to find the new records from the corrected dayfile.txt file.

There are quite a few fields I want to change. But the dayfile only has one row of daya for each day, how do I find the actualy record during today that went wrong?

If you mean the individual log entries made during the day, look in the 'monthly' log files. There's a viewer in Cumulus, and the format is described in the wiki, here:

That page also has some tips on correcting data. The dayfile.txt editor can only add
missing entries using log files data, any
corrections to the daily highs and lows have to be done manually.
If your bad entries are the common Fine Offset 'spikes', you might want to look at the spike removal settings on the Cumulus calibration screen.
