Why would I get erratic drops overnight and how do I ignore them?

Fine Offset stations generate occasional bad readings for a number of reasons - radio interference, poor signal strength, etc. Are you getting any 'sensor contact lost' warnings from Cumulus?
and how do I ignore them?
You could try the 'spike removal' settings on the calibration screen in Cumulus.
