Greetings,
Just looking through all the FAQ's etc and I'm not entirely clear if Cumulus MX is a "complete" release (i.e. v3.0.0) or if it is still considered Beta?
Scott.

It is still Beta, albeit a very stable one, as Steve continues to add functions and fix the occasional bug.

Righto thanks. Are the "database" formats compatible between them? i.e. can you roll back to 1.9.4 and keep whatever data was being logged by MX?

Yes, you could utilize the same data back and forth. Run MX by copying in latest Cumulus 1 data folder or run Cumulus 1 by copying in latest Cumulus MX data folder.
Like always, it is wise to have good backups.
