I set up my weather station last month, and it was a while before I had all the components working satisfactorily. As a result there are some false extreme measurements recorded for May. How can I delete all data up to midnight May 31st..

Delete the May entries in dayfile.txt using the built-in editor. Delete the May15log.txt file. Then use the built-in editors to correct the high/low data by fetching the values from dayfile.txt and/or the June log file (see the help for the editors for instructions).
