There is a clear instruction not to start Cumulus unless a weather station (logger) is attached.
What problems can we expect to find if we do this?
My station is a WH1090 - does this have a particular set of problems?

It won't be able to detect the station, and hence won't do anything. You can't then connect the station and expect Cumulus to start communicating with it. It shouldn't actually cause any problems, it just won't work.

Ah! Great.
That means that I can (after a back up for safety) play about with editing the files to get rid of spikes, etc., and thoroughly understand what the procedures are, without worrying about the station adding new data.
It seems obvious to do that without the station being connected - but I did wonder.

Yes, you should definitely take backups. I can't guarantee that something odd won't happen.
