Is this enough to make a replacement for the Temp/RH sensor of the VP2+?

That's enough. I used one based on an SHT75 until I replaced it with a Davis SHT31.

Sun and UV-I are the same...
2 - Yellow - +V
3 - Green - signal
4 - Red - Ground
5 - Black - Ground
