The most reliable way to 'rewind' is to use one of the sets of backup data which Cumulus creates, that way all of your files are consistent. Editing the timestamp in today.ini works, but you have to be aware that your other files will probably need attention. yesterday.ini only gets created at midnight (real time or logger data time).

It won't fill in 'holes', it will only fetch all of the data from a particular timestamp.
